Description:Isomalto-oligasaccharide is derived from refined corn starch through hydrolysis by enzyme preparation and refining, mainly contains isomaltose, panose and isomaltotriose.

IMO consists of 2-10 anhydro-glucose units with alpha-1,6- glucosidic linkages. Now it is known as a new kind of the popular functional sugar resources because it is hard to be digested in the stomach or intestine of human body. So isomalto-oligasaccharide is usually called no digestive sugar.

Applications:

Isomaltooligasaccharide (IMO) has been widely applied by food industry; functional food drinks and beverage; wine industry; and feed industry.

1. In food processing industry:

 

1.1. Dairy foods

Infant and Adult milk powder: Milk powder containing IMO is favorable to simulate the growth of bifidobacteria in elders' intestinal tract,which improves the gastroenteric function and enhance the immune ability.


Active cultured milk: Add IMO to fresh milk and then to produce active youhourt by the fermentation of bifidobateria and lactobacillus.The functional soybean milk can also be produced if IMO is mixed with the milk. 


1.2. Functional fruit juice: A new type of healthy fruit juice can be made from many natural fruit resources such as pear,goosebeery,coconut,guava,mango,apple and orange etc. IMO is more heat-resistant and acid- resistant and less hygroscopicity than sucrose but its viscidity is similar to sucrose. So it can be wholly or partly used as a substitute of sucrose in the products without changing the processing technique.

1.3. Honey syrup,made of honey and IMO ( the proportion of honey to IMO is 1:3) , i s refined to form a good product that has the function of proventing constipation,adjusting microflora and improving intestine ability.


1.4. Confection products containing IMO are free from cariogenicity and weight gain. 


1.5.1 A higher grade confection is produced by combining appropriate amount of IMO with condensed milk,cream,glutin and spices , and the content of IMO in each candy is more than 2 grams . This product with low calorie has the function to resist carious tooth and intestime disorder. 


1.5.2 A Smooth,chewy candy can be made with IMO, condensed milk, ,cream or emulsifiers and flavoring. It also has the function to resist carious tooth and intestime disorder. 


1.5.3 Bubble gum ,chewing gum and health candy are produced by combining appropriate amount of IMO syrup and power with glutin and flavoring. This product with low calorie has the function to resist carlous tooth and intestime disorder.


2. In wine-making industry :

 

The use of IMO can improve the quality and taste of wine. During fermentation process glucose and maltose are converted to alcohol by yeast,but isomaltose,panose,isomaltotriose,isomaltotetrose remain in the products because of its low fermentability. These low fermentable carbohydrates add flavour and bio-function to wines .

Bread and cake can gain some super flavor and function by adding IMO because of its hygroscopicity,low sweat taste and low fermentability. Cakes become more crisp and soft and Bread is more elastic and delicious. These products are easy to keep freshness and longer shelf life. IMO can decrease the crystallizability,lumping,deterioration,and sweet taste in sweetened bean paste and the lotus seed paste , and is good for health .
